Yame in Fukuoka Prefecture is Japan’s most decorated gyokuro region, and the same shading expertise carries into its matcha. The valley’s river fog and steep temperature swings slow leaf growth and concentrate amino acids.
Yame matcha tends to be intensely sweet and thick, often with less bitterness than Uji at equivalent grades, and a rounder, almost syrupy mouthfeel.
